Pulled Pork Sandwich with Coleslaw


I bought a couple of pork loins from Costco and wasn't sure what to do with them. After some web surfing I decided on a slow cooked pulled pork. Definitely the right decision! Everything was homemade including the BBQ sauce except for the whole wheat kaiser rolls which I bought from Corropolese (Italian Bakery close by). Incredible!


Recipe:

Slow Cooked Pulled Pork
1 white onion, thinly sliced
3 tablespoon minced garlic
1 cup chicken stock
1 tablespoon packed dark brown sugar
1 tablespoon chili powder
1 tablespoon kosher salt
1/2 teaspoon ground cumin
1/4 teaspoon ground cinnamon
2-4lb Pork Loin
2 cups barbecue sauce

BBQ Sauce
2 cup ketchup
1/2 cup apple cider vinegar
6 tablespoons dark brown sugar
6 tablespoons Worcestershire sauce
2 teaspoon liquid smoke
1 teaspoon salt
1 tsp garlic powder
Few dashes of hot sauce

Homemade Coleslaw
1/2 cabbage, thinly sliced
1 cup shredded purple cabbage
1 carrot, peeled and grated
1 green onions - diced
1 cup mayo
1/2 cup cider vinegar
2 Tbsp sugar
1/2 tsp salt
1/2 tsp pepper
1/2 tsp celery seed

Line bottom or crock pot with onion and garlic - pour in chicken stock. Use dry ingredients as a rub on pork. Slow cook on low for 6-8 hours. BBQ sauce should be made in a pot first - stir all ingredients with a whisk, bring to boil then simmer for 20 minutes.  Strain liquid from crockpot and pour in BBQ sauce - use forks to shred pork. Cook on low for another hour. Mix and chill all coleslaw ingredients in a large bowl then chill in fridge for at least one hour. Serve on lightly toasted kaiser roll topped with cole slaw.
